Mix this product with your seasoning and add the mix right at the beginning. Continue production as usual. Add salt and cure as required.

The 2M is a medium acidifying starter culture, which is perfect for slower fermenting types of sausage, typically Italian style products. The aroma and taste is a mildly acidic, which is typical for products originating out of Southern Europe.
MondoStart SP is a mild and fast-acidifying starter culture. It provides a characteristic and harmonious aroma and promotes reddening. Typically used for northern European style products. The MondoStart SP is instrumental in texture formation and has a great deal of assertiveness to spontaneous flora.
